Gnocchi


The gnocchi in Italy are a very popular dish.
The real housewives do not buy Italian gnocchi, but prepare them at home.
The recipe is very easy, you just mix flour and boiled potatoes.

INGREDIENTS for 2 people

300g potatoes
flour 60g
1 pinch salt

First, you have to boil the potatoes.
Once soft, peel and mash them very well.
To these add salt and flour and continue stirring.

Mix until you have a soft dough and compact.
Leave it in the fridge for ten minutes.
Once 10 minutes, create small "sausages" in diameter 2cm.

Cut, on a floured tray, small chunks.
Each of these, helping you with your thumb, drag it on the back of a fork to form lines.

The dumplings are ready, just cook them in boiling water.
They will be ready when it will rise floating.

The tiramisu is perhaps the most sweet Italian that exists.
And 'respite from the typical biscuits of elongated shape, very crumbly and tasty.
These cookies are called Savoyards, because comes from the Savoy region.

The whole thing is topped with a mascarpone cream and eggs, powdered by a covering of bitter chocolate.

INGREDIENTS


  • 200g mascarpone
  • 2 eggs
  • sugar 100g
  • bitter chocolate powder
  • Savoyards 200g
  • coffee 250ml


First you need to make coffee.
Do not add sugar or your tiramisu will be too sweet.

Beat the eggs with the sugar until they become very clear.
Add the mascarpone and you get a very thick cream.

Now you can compose your sweet.

Paid before a thin layer of cream.
Then washed for 1 second the ladyfingers in the coffee and begin to fix them on the bottom.
Keep it up, with a layer of mascarpone and Savoyards, until the end.

Sprinkle with a bit of dark chocolate and leave in the fridge for a couple of hours.

Serve cold, but not frozen.

Pasta, speck and zucchini



Today's recipe is pasta, speck and zucchini.
Speck is a typical Northern Italian meat and goes very well with the delicate flavor of zucchini.

INGREDIENTS



  • pasta 200g
  • zucchini 1
  • speck 100g
  • smoked cheese 100g
  • pepper
  • salt
  • olive oil



This paste is really very easy to do.
Just put a tablespoon of oil in a pan and let dry zucchini julienne cut.

When they begin to simmer add a cup of water and let dry.
By, in another pan, without oil, sauté the bacon.
All the fat will melt and will serve as a condiment.

When the zucchini are ready, add salt and pepper and mix with bacon.
Cook the pasta and set aside the cooking water.
Put the dough into the pan and stir well.
If it is too dry, add cooking water and stir.

Remove the pan from heat and add the smoked cheese and let dissolve.
Et voila, the dish is ready!

It 'a very creamy rice dish, to which are added various ingredients, mushrooms and pumpkin, from fish to meat.

INGREDIENTI


  • rice 150g
  • pumpkin 200g
  • Broth nut
  • chive
  • sage
  • salt
  • Pepper
  • butter
  • Olive oil
  • white wine

First, cut the pumpkin into cubes and put it to fry in a pan in which you have previously already grated onion and olive oil.
Sauté a few seconds (no salt added) and add the spices: a few leaves of sage and chives.
Unlike any risotto, you must now add the white wine to restore moisture to the pumpkin and have it destroy in cooking.
Once dried the wine, add the rice and toast for a few minutes.

Then add the broth, to cover the whole.
Let cook and if need be, add more broth.
Taste for pepper and serve.

The first recipe, which is also the most important, is the lasagna.
This dish, in Italy, is prepared during the holidays (Christmas, Easter etc) because it is very substantial and "little dietetic".




Let's start with the preparation of tomato sauce:

INGREDIENTS

- bottled tomato 2lt
- Olive oil 4 spoons
- onion 1
- salt (enough)
- pepper (enough)

- mincemeat 300g
- cheese 200g
- parmigiano 100g


In a large pan, fry the chopped onion with the olive oil.
Add the tomato sauce, salt and pepper and cook for about 30 minutes.
While the sauce is cooking, add salt and pepper to the ground meat and form small patties.
Fry them in olive oil and brown them.
When the sauce is ready, we can compose our lasagna.
On the basis of the pan put a little tomato sauce and rest your square of lasagna.
If the lasagna is dry, it is best to boil for 2 minutes in boiling salted water.
After the first layer of lasagna put the meatballs, cheese and Parmesan.
Another spoon sauce over the entire surface and yet lasagna.
Keep it up until it fills the pan.
Complete with sauce and parmesan, to form a tasty crust.

Your dish is ready.
